前言

眾所周知,旅游業(yè)早已雄踞世界經(jīng)濟的支柱產(chǎn)業(yè)之林。我們欣欣向榮的祖國將毫無疑義地在21世紀(jì)的頭20年,從一個旅游大國邁入世界旅游強國的行列。中國的旅游業(yè)如朝陽噴薄,云蒸霞蔚,風(fēng)光獨好。這一迅猛發(fā)展的形勢召喚著千千萬萬有志祖國旅游事業(yè)的熱血赤子投身其問。目前,優(yōu)秀的服務(wù)人員固屬搶手,但行業(yè)亟需的則是各類崗位群上的既精通業(yè)務(wù),又諳熟外語的各級管理人才。一般來說,旅游中等職業(yè)教育已漸趨成熟,而旅游高等職業(yè)技術(shù)教育則剛剛起步,有著廣闊的發(fā)展前景。隨著職業(yè)教育精神的不斷深入人心,在旅游高職高專的教學(xué)體系中,各類旅游英語的教學(xué)越來越具有了舉足輕重的地位。在“二十一世紀(jì)通用教材編委會”及上海交通大學(xué)出版社的精心組織下,全國多所大專院校、高職學(xué)院的學(xué)者、教師們通力合作,編寫了這套旅游英語系列教材。這套旅游英語系列教材的目標(biāo)讀者是:高專高職旅游專業(yè)各方向的學(xué)生、旅游管理或飯店管理大專自學(xué)考試學(xué)員、旅游中專、中職的英語教師以及各類旅游企業(yè)的各級管理人員。

內(nèi)容概要

《烹飪英語》屬于旅游英語系列教材,該書從讀、聽、說和視四個方面來強化學(xué)生對烹飪職業(yè)宏觀知識的了解和認識。全書共有17課,每課含三部分練習(xí),更加強了口語部分的練習(xí)。本書旨在培養(yǎng)學(xué)生在烹飪英語專業(yè)方面所必要的視聽說能力,從而使學(xué)生能夠順利地進行在廚房烹飪職場中的日常交流活動。

插圖:A carving knife is large type of knife with a straight edge. It is 8 to 15 inches longwith thinner blades. It enables the cutting of meats from hams and roasts. A goodquality carving knife costs $100 for a forged steel blade and high carbon materials.A vegetable peeler is designed to peel off vegetables skins as well as fruitskins. It is made up of metal blades attached to a metal, wooden or plastichandle. This peeler comes in three varieties such as the Lancashire design, Y-peeler or speed peeler and the Dalson Classic Aussie Peele (rotating blades).A whisk is used in food preparation. It is commonly known as a balloonwhisk. It blends the ingredients all together. Whisks are commonly used to beateggs and to whip creams. Most whisks are made up of metal and some are madeof plastics for nonstick cookware. It consists of a wire loops with narrow handle.Measuring spoons are used to measure an exact amount of wet or dryingredients. It can be made of plastic and metals that comes in different sizes ofsmall teaspoons and tablespoons.A spatula is also known as a turner or flipper. It has a long handle with awide flat edge. This utensil is used for lifting fried foods as well as mixing ortossing foods. It comes in many varieties, from plastic to silicon made products.A grater is a tool used in grating foods into fine pieces like cheese, garlic,nutmeg and onions. It can also be used to grate coconuts and potatoes. Graterscan be made up of plastic and metal with four sides grating options.Spoons come in three varieties, a mixing spoon, slotted spoon and ladle. Amixing spoon is a small curved blade used in preparing or serving foods. A slottedspoon is good for draining vegetables because it has holes or small openings to letthe liquid pass through. A ladle is a long spoon with a deep curve for servingliquids like sou~s and sauces.A can opener is a device used in cutting or opening metal cans. The cuttingwheel design of the can opener was created by William Lyman in 1870.Kitchen Scissors are a cutting instrument also called as shears, tt consists oftwo cutting blades with handles. Other kitchen scissors has a nut cracker on themiddle part of the two handles.Other important kitchen utensils are tongs, corkscrews and meat forks.Kitchen jobs would be a lot easier with these utensils. Good quality materials ofkitchen utensils would mean a convenient and sturdy tool that will last a lifetime.

  •   有書沒光碟,年前批準(zhǔn)退換貨的,年后顯示說退換貨不成功,過年賣家又不上班,現(xiàn)在過了15天又不能補發(fā)碟,唉,給的客服電話連續(xù)打了一個星期了,一直操作超時,都鉆石卡會員了,還受到這種待遇。好累,感覺不會再愛了。
