前言
隨著我國職業(yè)教育改革與發(fā)展的不斷深入,堅持以就業(yè)為導(dǎo)向,構(gòu)建以能力為本位,以基本職業(yè)素質(zhì)和職業(yè)能力培養(yǎng)為主線,以模塊化課程結(jié)構(gòu)為主體,凸顯高職與行業(yè)特色的課程體系,培養(yǎng)適合市場需求的高素質(zhì)勞動者和實用型技術(shù)人才,已成為當前高等職業(yè)院校課程改革面臨的重要課題! 模塊化教學(xué)是國際勞工組織為提高勞動者素質(zhì)開發(fā)出的技能培訓(xùn)模式,是目前高職教育普遍認可的教育模式,也是職業(yè)教育的成功經(jīng)驗。高職教育應(yīng)以行業(yè)需求為導(dǎo)向,高職院校旅游管理類專業(yè)教育與旅游行業(yè)聯(lián)系緊密,其專業(yè)人才培養(yǎng)更應(yīng)體現(xiàn)其職業(yè)和崗位的特點。近年來,許多高職院校的旅游管理類專業(yè)均結(jié)合自身辦學(xué)優(yōu)勢、專業(yè)特點和行業(yè)實際,在教學(xué)改革上做了大膽嘗試,積極開展模塊化教學(xué)研究,并取得了較為豐碩的成果。但將模塊教學(xué)改革及課堂實踐的理論貫穿于整個課程體系的建設(shè)并用以踐行成套教材的編寫,尤為鮮見?! ∫话銇碇v,高職模塊化教學(xué)就是從崗位驅(qū)動入手,確定專業(yè)的職業(yè)能力培養(yǎng)目標,根據(jù)該目標將教學(xué)課程分解為若干模塊,學(xué)生可根據(jù)自身興趣精修不同模塊,以實現(xiàn)不同的分目標,達到就業(yè)需求。而模塊劃分的最大特點是非學(xué)科完整性,是行動導(dǎo)向性的,更有利于開展課堂教學(xué)活動。模塊的劃分是以主題為中心把相關(guān)的知識組織到了一起,使之更加貼近生活、貼近學(xué)生需要,使內(nèi)容變得更容易操作,有利于學(xué)生在活動中學(xué)習(xí),在學(xué)習(xí)中活動。這些優(yōu)點相對于傳統(tǒng)教學(xué)有許多創(chuàng)新,也有非常好的效果。但對于教材的編寫來說,卻有相當難度。其主要原因是在教材的編撰過程中,模塊的劃分沒有統(tǒng)一標準,也沒有較成熟的方法借鑒,編寫者往往很難把握其尺度。尤其對于基礎(chǔ)理論課程教材的編撰,更是難以把握?;诖?,我們組織了涵蓋業(yè)內(nèi)權(quán)威專家及有著豐富教學(xué)經(jīng)驗及旅游企業(yè)管理經(jīng)驗的教授、學(xué)者和骨干教師的作者團隊,對此進行了積極、有效的探索。
內(nèi)容概要
本書以模塊教學(xué)為指導(dǎo),共設(shè)置了六大教學(xué)模塊,內(nèi)容涵蓋了酒店前廳、客房、餐飲及康樂等主要前臺部門的一線服務(wù)內(nèi)容。教材注重學(xué)生能力的培養(yǎng)以及“教”與“學(xué)”的緊密結(jié)合,各模塊均設(shè)置若干學(xué)習(xí)任務(wù)。各任務(wù)包括知識導(dǎo)入、熱身練習(xí)、模擬對話、課堂活動、拓展閱讀以及綜合練習(xí)六個環(huán)節(jié),體現(xiàn)了“教、學(xué)、練”一體化的教學(xué)理念,突出了高職教育的特色。 本書可作為高職院校旅游專業(yè)課程教材,也可作為旅游從業(yè)人員的培訓(xùn)教材。

Classifying hotels into different types is not an easy task. The hotel in-dustry is so vast that many hotels do not fit into single well defined category.Hotels can be classified in various ways, based on location, facilities andservices offered, and guests served.1. Classification by target market ?。╨) Commercial Hotel Commercial hotels provide services essentially for business people. Theyare usually located in downtown or business districts and operate year round.Many city hotels and diversely located motels fall into this group. Larger es-tablishments provide a variety of services for their guests, including a rangeof restaurants and beverage service options from coffee bars to fine-diningrestaurants. ?。?) Resort Hotel A resort hotel may best be described as one where people go to relax andbe entertained. Resort hotels and motels are typically located in seaside, lakeor mountain areas, and they cater primarily to tourists and vacationers. Re-sort hotels provide all hotel services plus recreational facilities, such as swim-ming pools, tennis courts, game rooms, and health spas, as well as plannedsocial activities and entertainment. As the business of many resort hotelsfluctuates with the season, some resort hotels provide additional conventionand conference facilities to encourage customers to combine business withpleasure. ?。?)Convention Hotel Convention hotels are specifically designed to cater to people attending aconvention, business meeting or other social gatherings. These hotels havelarge convention complex, exhibition halls and banquet rooms. They are of-ten located outside metropolitan areas and provide spacious parking-lots.
